A local restaurant group has announced it will open a new pizza joint on Boston's Beacon Hill.
According to a Boston magazine article, the award-winning restaurant group BCB3 has announced it will open Willie's in a space next to Zurito at 20 Charles St., between Chestnut Street and Beacon Street, in early spring. The magazine noted that the “neighborhood pizza joint,” as co-owner and chef Jamie Bissonnette describes it, will offer sit-down dining with pizza, pasta, and more.
“If we decide we want to put a Persian rice dish on the menu for a weekend, we will,” Bissonnette stated to Boston magazine. “As long as we're consistent with our staples of having good pizza, good pasta, and good salad to make everybody happy, we can be flexible with the rest.”
BCB3 is the same restaurant group behind the popular dining establishments Zurito, Somaek, and Sushi @ Temple Records.
Bissonnette also explained that while the pizza and pasta offerings are still under development, guests should expect them to be anything but ordinary. Early concepts include a gilda pizza, a deconstruction of the popular gilda pintxo from Zurito, with anchovies, olives, and quindilla peppers as toppings. He also teases a few novel ideas on the pasta side, including a nontraditional bucatini amatriciana using yak-gochujang (Korean chili paste stir-fried with minced meat).
On the drink menu, guests can expect “soju so people can make somaeks,” he said, in addition to beer and wine selections.
