Park Bagelry & Café in Allston has opened its doors, bringing Montreal-style bagels to Boston. 

The opening comes after nearly two years of recipe testing across North America by a team led by the Tiny Engine Collective co-owners Jennifer Park, Tucker Lewis, and Court Verhaalen.

Park serves as the chef and lead bagel maker, overseeing the production of hundreds of hand-shaped bagels daily, with a range of toppings and cream cheeses. The bagels include miso and veggie options, as well as coffee; many are flavorful enough to be enjoyed without toasting.

Highlights of the menu include jalapeño cheddar bagels topped with chiles, a garlic bagel with scallion cream cheese, and a sweet blueberry lemon jam. Bagels run around $3.50 each, and sandwiches start at $8.50.

“I start at 3 or 4 in the morning and bake until 7 or 9 a.m.,” Park said in a statement shared with the Boston Globe

The bagels feature local flours from Maine Grains and King Arthur. They're naturally leavened and cold-proofed to develop a sourdough-like tang. Next, they're baked in a wood-fired Montreal-style oven for dense chew and airy crumb, with a subtle maple sweetness.

The bright, spacious interior at 280 Western Ave., located within the Allston Labworks Campus, features long wooden tables designed for lingering over a bagel and a cup of coffee.
