When Juan G. Pérez immigrated to the United States, he couldn't speak English, had no professional contacts, and began his career from the ground up as a dishwasher.
Despite the challenges that he faced, Pérez now finds himself ranked among the Top 100 Pizza Makers of the Year by the Best Pizza Awards. In addition, the Boston restaurant where he works as executive chef, Posto, has been named among the best in the United States by 50 Top Pizza for two consecutive years.
His passion for pizza was ignited early when he was given the chance to learn how to make it. While specializing in Neapolitan pizza, Pérez emphasizes creativity and innovation in his creations, believing that anything can be placed on a pizza to make it stand out.
Pérez has amassed a substantial social media following of 1.1 million across platforms such as Instagram, Facebook, and TikTok, where he shares recipes, techniques, and ideas to inspire others.
Core values like discipline and consistency have been instrumental in Pérez's success, guiding him to forge his own path without copying others. He encourages aspiring chefs to do the same.
“Don't believe everything they say. Don't try to be like everyone else. Build your own path,” he said in an interview with PMQ Pizza magazine.
Pérez credits Tony Gemignani and Chris Bianco as significant inspirations for his work, but he also finds examples in the many Latinos who shaped their own successes. He views the Latino community as a vital part of the U.S. pizza industry and seeks to elevate the contributions and stories of Latino and Latina pizzaiolos.
"They turn every dough into a statement and every oven into a platform for telling their truth," wrote Sofia Arango, founder of Latinos en Pizza, in the September 2025 cover story for PMQ Pizza, which featured Pérez on its cover.
His ultimate goal is to open his own restaurant, creating pizzas that tell a story through authenticity, passion, and cultural identity.
